Vegetables

When I was a child, I didn't like vegetables very much. Now that I'm an adult, I still don't care for them too much except for a select few. Eggplant is one of those few.

I have made eggplant parmesan a lot of times, so this time I wanted to try something different. It also had to be low carb because the hubby is doing a low carb diet.

I added ricotta cheese to make it a little more hearty for my husband. I also made them into stacks instead of a casserole. However, this recipe turned out really great and it had a delicious taste! I will be making this again for sure!

FDR is one of the presidents that I admire and this book showcased his leadership abilities and his dedication to the United States of America. Lizzie is an exceptional woman! I don't like giving spoilers because I believe that everyone should read and judge a book for themself. This book is worth the time, believe me! Here's my review: Oh wow! This book is amazing! There are so many twists and turns. I thought I had it figured out and then it turns out that I didn't!! I enjoyed everything about this book. The setting of a picturesque small beach town is perfect! The cast of characters are relatable and easy to like. The little surprises that popped out here and there kept me interested and involved!!
