Garden Fresh

We planted corn this year and it actually grew! It was so exciting! Last year, some of our corn was eaten by deer and most of it died because we had a moderate to severe drought. Our zucchini also did very well this year. So, we have a bumper crop of these two delicious veggies. Dinner was vegetarian this night! Needless to say, my children were not to thrilled. My husband and I loved the meal! First was Mexican street corn. I have heard of this before, but never tried it. Wow! Sugary Sweets

I get my sweet tooth from my grandmother. She is now 92 years old and has secret stashes of candy around her house. I'm not that bad (yet)! Some of my fondest memories of her when I was little was that she always had candy in her purse. Little mints, gum, sometimes even chocolate would find its way into my hand when I sat next to her on road trips!  At her house there was always one or two candy dishes proudly displaying its wares! I know that sweet stuff is in my blood (literally) so I do try to limit myself. I did not have chocolate bars on hand so I used mini morsels. I only had mini marshmallows so I used those. All in all, it was undoubtedly sweet. My girls loved it! I ate a small amount! It is the perfect substitute for a rainy day when you're really craving S'mores

The easy way out?

Some days I really look for the easy way out. I know I'm not alone.  Do I really have to fold the kids laundry when I know they're just going to shove it in their drawers? Can't I use paper plates and plastic utensils instead of the real deal and save myself time and doing the dishes (which I hate)?  Bring in the subject of casseroles. I love casseroles, but do they really save time? Not in my book. You still have to cook the meat, cook the rice or potatoes, cook the vegetables and then stir them together and put that concoction into the oven. Now that I wrote that, I'm trying to figure out why I love casseroles. Breaking out of ruts

Everyone gets into ruts. Some of them have to do with your personal life and others are about food. We have gotten into a rut lately with food. I love to try new things (this was not always true) but my children are hesitant. So, I have decided to try at least two new recipes per week! I'm sure they won't like a few but I'm hoping they'll like some so we can add those to my menu planner! This time I was searching for a taco type recipe and of course I found one on Pinterest! My children helped me make it and there were exclamations of delight as they ate it!  Wonderful!  My girls helping me cook!  Stirring the pasta!  This recipe was easy to follow and easy to eat! A little bit of spice

When I first met my husband, he opened me up to all kinds of new foods! He was and still is never afraid to try something new and not a picky eater. That was a huge blessing to me starting out as a newly married couple. I had cooked a little but not too much. We still laugh about some of my near disasters!  One of his favorite types of food are spicey foods. I never really cared for spicey foods but now I'm appreciating spice more! The zucchini was tender and the filling was just delicious. I'll be making this again for sure!

Comfort Food

Well, another weekend is gone. Over the weekend I had a terrible case of craving comfort food. Not just any comfort food, but spaghetti and meatballs! I have tried many recipes over the years and this one from Weight Watchers is my favourite. Of course, I have tweaked it because I have picky eaters. I do not use the sausage and I use sauce from Aldi's. This time I made ribbons out of the zucchini! They're so pretty! The recipe is not on Pinterest so I had to take a picture of my copy. I hope you can read the words. Try this recipe, you won't be disappointed. And, hey, try to have a great week!

Bebe

As a child, I did not have a lot of pets. I had a salamander that someone gave me on the bus. Her name was Kelly. She lived for a few years. We finally were able to get a cat and she was interesting to say the least. She would never come to you and her name was Kitty. She could be affectionate but those times were few and far between. She would often hiss and try to scratch you as you walked by. Such a sweet kitty! When I met and married my husband, he had two cats. They hated me, so much that they had an "accident" on our brand new comforter. They also would hide the mail all over the house. We unfortunately had to get rid of them. So began a season of lots of cats and kittens. Then we found ourself expecting. Since you're not supposed to be around cat litter when pregnant, we decided we were done with pets..... Who knew we would end up having children who LOVE animals. They both absolutely  love animals.  They wanted a cat. We got one and she was run over. Then
