A New Year!

So it's now a new year. I hope it's a great year! I made a goal to try at least 25 new recipes per year and I'll try to do that. I am having some health issues so that's why my posting has been sporadic. So, here's to a new year! First recipe tried was Low Carb Pecan Pie by Keto Connect. The next recipe I tried was Chicken Parmesan Meatballs by barefeetinthekitchen.com! These were wonderful! They had a slight crunch which reminded me of chicken parmesan. Chicken and stairs

I hope I caught your attention with that title! I have made the following recipe several times and have never been disappointed. It's Chicken Parm Casserole by Polly from The Thriving Home. https://www.pinterest.com/pin/171066485822453822/ This is a simple recipe and a crowd pleaser! The other half of this is our stairs leading to our gross basement really needed to be redone. My husband used up his whole day off repairing them. I'm so proud of him! Vegetables

When I was a child, I didn't like vegetables very much. Now that I'm an adult, I still don't care for them too much except for a select few. Eggplant is one of those few. I have made eggplant parmesan a lot of times, so this time I wanted to try something different. It also had to be low carb because the hubby is doing a low carb diet. I also made them into stacks instead of a casserole. However, this recipe turned out really great and it had a delicious taste! I will be making this again for sure!

Comfort Food part 2

Well, fall is officially upon us! This is my favorite time of year! I love going apple picking and pumpkin picking. This past week, we went to get pumpkins and the place had a variety of squash. One of which I had never heard of! It was called Mashed Potato Squash. I was intrigued! My husband is doing low carb and this sounded perfect. Another favorite comfort food of mine is meatloaf. No one else in my family likes it so I rarely make it. I made it to pair with this squash because nothing goes together better than meatloaf and mashed potatoes! A favorite recipe!

Some recipes you just come back to over and over because they're that good. A great thing about recipes you cook over and over too is eventually you don't have to look at the recipe and it's easier to make! I'm all about easier! This recipe is Creamy White Chicken Chili with Cream Cheese by The Cookie Rookie. https://www.pinterest.com/pin/144185625553027748 I always use a rotisserie chicken for this recipe and it really adds to the flavor!  Here's my daughter adding a little bit of onion powder!  Here's the chicken simmering in the broth. Here's the final result! This truly is a great recipe. Try it out and let me know if you do!

Birthdays

Birthdays come around every year, just like clockwork. I used to love birthdays until the dreaded 40. Now, it seems like my body is having more aches and pains and I can't sleep like I used to. This dessert I made was for my Dads' birthday! He loves pecan pie (well he loves any dessert with nuts in it)! So, I decided to make pecan pie squares. Oh my deliciousness.... This is the filling!  Final result coming out of the oven! This is all that was left after I served everyone! Great dessert, easy to make. This will be made by me again!

Something New?

One of my favorite movies to watch with my kids is the "Croods." I love the line, "Don't eat it, it's new." Here, I'm trying to get my kids to eat new foods and love them. Last night, I was really craving Chinese food but I didn't exactly have money in my budget so I tried this recipe. It's an article from Huff Post- Chicken and Veggie stir fry. https://www.pinterest.com/pin/171066485829918050/ This recipe was simple to follow and DELICIOUS! I loved the sauce. So much that I wished I had made double or triple the sauce. I will next time! Plus, it's kid approved!  The magical sauce!  I will make probably triple next time!  Try this recipe and let me know how it turns out!
