Pork adobo

Hello all! It's a sunny day here in NY and the temps are soaring at 42! A perfect day to make a yummy dinner. This is from one on my weight watchers books. It's called pork adobo and it is awesome! This book has some really good recipes! I did double everything so my husband would have leftovers for lunch. It's a real easy and delectable recipe. If you try it please let me know! I always serve it over jasmine rice but regular rice would work just as well! Bon appetit!

Muffins part II

Hi again! If you read my last post, thank you! This is another one of my favorite recipes from~" Baking without eggs." It's called the perfect bran muffin! If you need some fiber in your life, this is the way to get it! Muffins

Hi there! The other day I was watching Seinfeld and it was the one about the muffin tops. This got me thinking of muffins of course! I have a favorite book that I use for baked goods. It's called, "Baking without eggs." When my daughter was little, she was allergic to eggs which prompted the buying of this book- all of 15 years ago. You can see from the picture that it is used quite a bit. I love to bake and I still use these recipes even though my daughter is no longer allergic to eggs. My favorite is a recipe called- "Good Morning Muffins." They are the best muffins in my opinion! They have an almost apple pie flavor to them. I hope you try these and leave a comment if you do! A snowy day

As I'm writing this, the snow is falling in New York. Just yesterday it was a balmy 58 degrees and I was hoping for spring but, nature took its own path once again. New things over the winter- We have 2 new pets!  A new hamster named Pebbles and a new baby rabbit named Binkey!  I also became the mother of a teenager! Where does the time go? It seems like only yesterday, my daughter was just born and now she's 13. Me, my youngest (whose 11), and my teenager!  I did try quite a few new recipes but I'm only posting on one this time. A New Year!

So it's now a new year. I hope it's a great year! I made a goal to try at least 25 new recipes per year and I'll try to do that. I am having some health issues so that's why my posting has been sporadic. So, here's to a new year! First recipe tried was Low Carb Pecan Pie by Keto Connect. Chicken and stairs

I hope I caught your attention with that title! I have made the following recipe several times and have never been disappointed. The other half of this is our stairs leading to our gross basement really needed to be redone. My husband used up his whole day off repairing them. I'm so proud of him!
